Each movement explores transformation. Not transformation through disguise, but transformation through understanding. The menu moves through four movements rather than traditional courses. Moments appear and disappear. A soup may arrive where a course was expected. A salad may replace a palate cleanser. A cocktail may tell part of the story. Fire becomes part of the experience. Some dishes evolve while being eaten. Others change through temperature, aroma or memory.

Nothing is there by accident.

The goal is not to impress with complexity, but to reveal the extraordinary hidden within the ordinary.

Freshness becomes as important as depth. Lightness becomes as important as richness. The first bite is not always the same as the last. And perhaps most importantly, every ingredient is allowed to speak in its own voice.
